Classic tostones are a delicious, savory snack made from unripe green plantains. (Maduros, on the other hand, are made with ripe sweet plantains.) Although they’re usually double-fried, these air fryer tostones are just as crispy as the classic version with a fraction of the fat—and it doesn’t. there’s no scary pot full of hot oil! You’ll start by cooking them once, mashing them to flatten them, giving them a quick bath in seasoned water, then cooking them a second time to crisp the outside. The result is a delicious crispy snack, perfect for dipping into the creamy mojo sauce. Popular in the Caribbean and Latin America, tostones are also known as tachinos or chatinos in Cuba, platano frito or frito verde in the Dominican Republic, and patacones in Panama, Venezuela, Colombia, Costa Rica, Peru and in Ecuador.

- Trim and discard the ends of the plantains. Using a knife, cut an incision lengthwise in the plantain skin, avoiding the flesh. Slice the plantain into 1-inch slices. Using your fingers or the back of a spoon, remove the skin from each slice; discard the peel.
- Lightly coat an air fryer basket with cooking spray. Working in batches, arrange the plantains in a single layer in the basket. Bake at 400° until just soft enough to crush and stay in one piece, about 6 minutes.
- Transfer the plantains to a work surface. Using the bottom of a cup, flatten into a disk.
- Meanwhile, in a large bowl, combine water, 2 tsp salt and 1/2 tsp garlic powder until salt is dissolved. Soak the tostones in the water mixture for 5 minutes, then pat them dry with paper towel. Spray both sides of the dried tostones with cooking spray.
- Working in batches, in the air fryer basket, arrange the tostones in a single layer. Bake at 400°C until golden and crispy, about 7 minutes; Season with salt.
- In a small bowl, whisk cilantro, yogurt, oil, lime juice, orange juice, cumin and 1/4 tsp. remaining tsp. salt and a pinch of garlic powder until blended. Serve the tostones with the sauce on the side.
