Guyanese immigrant chef Tavel Bristol-Joseph and his hospital group partners Emmer & Rye are set to open Caribbean-inspired restaurant Canje this fall at 1914 E. Sixth St. in East Austin, Texas.

Named after the national bird of his native country, the pheasant canje, the new restaurant will offer Bristol-Joseph the first opportunity in his culinary career to bring the flavors of his native country and region to the palettes of diners. the lonely state.

He acknowledges that Austin diners likely have limited knowledge of Guyanese cuisine, but says he’s delighted to share Guyana’s range of flavors through dishes like roti and pepper as well as Caribbean dishes like jerk chicken. and the spicy beef patties.

“The beauty of the Caribbean lies in all of these influences. It’s a nice mix. And I want to make sure the food represents that because I think we need it more than ever, ”Bristol-Joseph told the American-Statesman.

Bristol-Joseph, born and raised in Guyana, had a difficult childhood. His father, a drug dealer, died when he was 7 and his mother was stranded in the United States due to visa restrictions. He moved to the United States shortly after graduating from high school with the dream of playing professional basketball, but soon realized he had more play in the kitchen than on the field and instead enrolled in a baking school in New York City. Today Bristol-Joseph has become an undeniable force in the kitchen and is co-owner alongside 2016 Best New F&W Chef Kevin Fink and Executive Pastry Chef at five different restaurants in Austin including Emmer & Rye, Hestia, Kalimotxo, Henbit and TLV. .
